Macro Friendly Cookie Mix – Triple Chocolate Chunk

It was late Sunday morning and the kids and I both had a craving for something yummy. Our only problem is that right now, it’s really important for everyone to stay home and isolate, so we had to make do with what was in our pantry (or in my shop😁😁). Luckily we had the brilliant idea that this would be the perfect chance to test out one of the amazing sounding Macro cookie mixes from Macro Mike. 

The reason I personally love this brand is because all of their baking mixes are dairy and gluten free, vegan and packed with plant protein that will help keep you fuelled and your tummy feeling good. They have thousands of happy customers and some absolutely amazing looking recipe ideas. Being gluten and dairy intolerant himself, the founder has an enormous passion for creating the most delicious tasting allergy-friendly and plant-based food.

Per cookie – 61 cal, 8.5g carbs, 3.3g protein, 1.5g fat.      15 cookies per packet

 

Step 1. Preheat fan forced oven to 200°C 

Step 2. Empty the packet into a bowl and add 120ml of Almond milk or any other nut/coconut milk. 🙋‍♀️Tip: Add any optional extras here like extra vegan choc chunks, nuts or dried fruit!

Step 3. Mix it up! Stir vigorously then use hands to form into a ball. Hand roll into 15 equal sized cookie balls.

Step 4. Place on a non stick tray with a light spray of oil or line tray with baking paper. Squish cookie balls with a fork to flatten. Make sure they are even.

Step 5. Pop in the oven for 12-15 min. They are ready when they are soft to touch. They will go firmer when they cool down.

Step 6. Eat them!

🙋‍♀️Tip: You can top with dairy free ice-cream, maple syrup, sliced bananas, peanut butter, anything yummy!

Dip them into your morning coffee, create nice-cream cookie sandwiches or crumble them over your favourite smoothie bowl

The Results

Very happy! We just ate them plain without any extra add on’s or toppings and they turned out exactly as promised and did not disappoint. They were lovely and chewy and the chocolate chunk pieces were deliciously gooey! They reminded me of a heated up cookie from Subway but without all the guilt and bad stuff. 

They were super easy to make, as you can see from the video my little fella did all the work, so overall not only is this a fabulous product, it can also be turned into a great, fun little family activity with a lovely result at the end!
